Pickle Kraut, Beetroot, Carrot, Cumin & Horopito

Fresh beetroot and carrots are wild fermented with crisp green cabbages then delicately spiced with toasted cumin and wild foraged peppery horopito.

Wildly Pickle Kraut is unpasteurised and contains prebiotics and live cultures.

Hand crafted on the Matakana Coast. New Zealand.

Serve with: Salads, roasts, toasted and fresh sandwiches, soups, stews,
eggs and cheese boards.                                                         

Ingredients: Cabbage (40%), carrot (40%), beetroot (18%), nz sea salt, toasted cumin, black pepper, horopito.

Shelf Life / Storage Information:

Wild Delicious Krauts and Kimchi are raw, living, wild fermented products and require refrigeration. 

They can last a long time in your fridge if unopened. Once open, consume within a month. 

They have an 8 month shelf life and can reach you with a best before date with 12 weeks to 7 months on it.

 If you require a best before date on the longer side, please leave us a note in the comments section when ordering.

There are 3 ways to create fermented krauts and kimchi and they are as follows….

1: Ferment then pasteurise for a shelf stable product. This gives ok flavour but a soft texture and zero health benefits. 

2: Ferment with industrial lab cultures then keep raw. This creates a lovely crunchy texture and some live cultures but not too many strains and a narrow flavour profile. 

3: Wild ferment with only the already present naturally occurring soil microbes and then keep raw and live cultured no pasteurisation. This is what we do and it gives the most varieties of probiotics by a long shot, the best complex flavours and a delightfully crunchy texture. Wild fermented = The best of all worlds, flavour, texture and health benefits.

Elevates slaw!

I love mixing the beetroot and the lemon kraut through slaw. It is rainbow on a plate and is so crunchy and tangy and delicious. 10/10.

So tasty

I was hesitant whether I'd enjoy this kraft but was willing for the health benefits, but, it is surprisingly good! So tasty! The cumin flavour is subtle and delicate yet adds such dimension in flavour. We've been enjoying this on salads, sandwiches, crackers and even the odd spoonful on its own. Looking forward to trying other krauts
