Kimchi Fried Rice
This is an easy and delicious recipe that you can throw together for lunch in less than 5 minutes!
It's a great way to use up leftover rice and the Kimchi is a brilliant hack to add in heaps of flavour and probiotics.
Ingredients:
- 2 teaspoons olive oil
- 1 cup precooked rice
- 1/4 diced red onion
- 1/4 cup chopped capsicum
- 1/4 cup frozen peas (or other veggies)
- 1 tablespoon soy sauce
- Salt and pepper to taste
- A spoonful of Wildly Kimchi for cooking (remember - heating probiotics can take away some of their goodness, but this is a great way to add in lots of flavour)
- A generous dollop of Wildly Kimchi for topping
Instructions:
- Heat the Oil: In a large frying pan, heat the olive oil over medium heat.
- Add Rice: Stir in the precooked rice, breaking up any clumps. Let it fry, stirring occasionally until it's heated through and begins to crisp.
- Sauté Vegetables: Add the red onion and capsicum, cooking until softened. Then add the peas or other veggies and cook for another few minutes.
- Season: Drizzle soy sauce over the rice and season with salt and pepper. Mix thoroughly.
- Incorporate Kimchi: Mix in a spoonful of Wildly Kimchi and cook briefly
- Serve: Remove from heat and top the fried rice with a generous spoonful of Wildly Kimchi.
