This is a wholesome, nutritious, and super delicious meal crafted by @foodiesophie_ which is full of probiotics and aromatics 🌶️

Ingredients for one serving:

For the Chicken Tikka:

  • 200g chicken breast or thigh
  • 1/2 tsp ground ginger
  • 1/2 tsp garam masala
  • 1/4 tsp chilli powder
  • 1/4 tsp turmeric
  • 1/4 tsp chilli flakes
  • 100g natural yoghurt
  • 2 tbsp tomato paste

For the Wellness Bowl:

  • 150g cooked rice
  • 100g Wildly Pickle Kraut
  • 1/2 small cucumber, sliced
  • 1/2 capsicum, thinly sliced
  • 1/4 cup pickled red onion
  • 2 spring onions, chopped
  • 1/2 cup grated cucumber mixed with 100g natural yoghurt

Instructions:

Marinating the Chicken:

  • Preheat your oven to 180°C.
  • Put the chicken in a bowl and then add the ginger, garam masala, chilli powder, turmeric, and chilli flakes.
  • Stir in yoghurt and tomato paste until smooth and coat chicken thoroughly in the marinade.
  • Place chicken on a lined baking tray and bake for 20-25 minutes until cooked. Let rest for 5 minutes.

Assembling the Wellness Bowl:

  • Lay cooked rice in a bowl.
  • Add Wildly Pickle Kraut, cucumber, capsicum, and pickled red onion.
  • Top with grated cucumber and yoghurt mix.
  • Add chicken, garnish with spring onions and coriander.
