
Cauli Kraut Salad
Here's a simple side dish that makes the most of spring veg.
Ingredients:
- 1 medium cauliflower, cut into florets
- 2 medium parsnips, diced
- 2tbsp olive oil
- Salt & pepper (to taste)
- 1/3 cup sliced almonds
- 1 cup Kraut (use your favourite flavour!)
- 1/2 cup fresh herbs (parsley, coriander, or mint work well!)
Instructions:
- Preheat your oven to 180°C. Place the cauliflower and parsnip on a baking tray and drizzle with olive oil and salt and pepper, and roast for 25-30 minutes.
- While the veggies are roasting, toast the sliced almonds in a dry pan over a medium heat for 2-3 minutes, until lightly golden.
- Transfer your veggies to a serving bowl and toss gently with the toasted almonds.
- Finish with a generous serving of Kraut and a sprinkle of fresh herbs.
