Here's a simple side dish that makes the most of spring veg.

 

Ingredients:

  • 1 medium cauliflower, cut into florets
  • 2 medium parsnips, diced
  • 2tbsp olive oil
  • Salt & pepper (to taste)
  • 1/3 cup sliced almonds
  • 1 cup Kraut (use your favourite flavour!)
  • 1/2 cup fresh herbs (parsley, coriander, or mint work well!)

 

Instructions:

  1. Preheat your oven to 180°C. Place the cauliflower and parsnip on a baking tray and drizzle with olive oil and salt and pepper, and roast for 25-30 minutes.
  2. While the veggies are roasting, toast the sliced almonds in a dry pan over a medium heat for 2-3 minutes, until lightly golden.
  3. Transfer your veggies to a serving bowl and toss gently with the toasted almonds.
  4. Finish with a generous serving of Kraut and a sprinkle of fresh herbs.
